Carrots, onions, celery, chicken breast, broth. Couple springs of rosemary too. Also about half a beer to finish filling the pot when I ran out of broth.
Wish I had some andouille sausage or something throw in too, just for laughs.
Gonna add some Greek seasoning at the end and serve with either rice or egg noodles.

I used to cook like that for myself. But that wouldn't fly with the wife and kids. They don't like non-fat meals.

More so cuz they keep their flavor better without getting all dried out and chewy like breasts?

Even with a crock pot tho, it’s prone to overcooking.
I basically try to cook until it’s just starting to boil. At that point it’s usually perfect.
Beav, however, gets to that point and says, better let it boil hard for another 3 hours.
Then again, beav is the kinda guy who adopts a pandemic mantra of “but there’s money to be made!”, until he gets the fungus and goes all “woe is me.”
When you’re in a classroom with little kids all day, then pick up a 2nd gig driving tourists around sharing the same enclosed space in a car with y’all all night, who could have possibly seen that coming, beav? But go ahead and keep pouting.

My neighbor is from Hungary and raises rabbits. They breed like rabbits so he has too many most of the time.
When he can't get his family to eat any more rabbit, he skins them and drops at my house. I quarter them and put them in a crock pot with one chopped pear, two diced tomatoes, white wine, red onion, rosemary and thyme sprigs and some chicken broth and let it cook on low for about 3 hours. Take the rabbit out and strip the meat from the bones and chop it up. Make a roux and add the broth from the crock pot, some cream, chipotle chili and sherry. Add the rabbit to the sauce after it has thickened and then serve over spaetzle or homemade egg noodles.
If you don't have a live off the land East European to supply rabbit; chicken thighs would be an easy substitute.
