I roasted about three pounds of hatch chiles yesterday. So good.

how do you roast them? do you have one of those baskets that rotates over the flame?

I use hardwood lump charcoal on my Weber kettle. Direct heat. Flipping and moving often. When they're good and charred, I put them in a container with a lid until they cool. Super easy to peel.

Largely a power move by the manager.
Walked to the Chili's after a wedding - was by our hotel - manager thought one of us couldn't be served alcohol.
That was fine -- but said person ( my BUD ) had a drink of my drink, was caught by the server, and manager, kicked us out, and said the police were on the way.

Tried to talk with manager that she didn't need to call the police, we were leaving, and she said she was going to ask them to issue a restraining order.

Spoke with police in parking lot.
Told them we were right next door -- they said this manager had done this before and they have to show up if called -- and to go have a good time anywhere else but Chili's.

Just made a panful of roasted homegrown padron peppers. Talk about playing Russian roulette with food! My wife has perfected the technique of evaluating potency before chomping on the whole one. Shishitos thrown in for good measure
