your memorial stadium renderings are nice ...

it will be interesting watching j'hawker feedback. the exterior (metal?) wrap is interesting to me. lighting looks new age. i'd say it all comes off as "right proper" which one would expect of ku. anyone know seating capacity?

Aren't there some boots that need licking over on Tiggerboard about now?

Those boots aren't going to lick themselves.

young coconut, mainly (plus evaporated milk and sugar)

mine isn’t “traditional” (it’s a Filipino desert) since i use a graham cracker crust, but i’m too lazy to make pie crust and i kinda like the graham cracker anyway

Whew! OK, then.

Have never loved coconut.

I can eat it if it isn't the primary taste, like in a Almond Joy, and I don't hate coconut, but I don't really like it.

Buko pie is a new one on me. Sounds great though.

I had some disappointments at the farmer's market this weekend.
Good: cantaloupe, watermelon, corn
Not so good: tomatoes that were red and looked ripe but tasted like grocery store cardboard.
A $9 loaf of cinnamon bread that wasn't very good.
Thai hot chiles that were not hot. Well, maybe they are Minnesota hot, but they're not hot.

really simple recipe

meat from 4 young coconuts
1/2 c sugar
1/2 c evaporated milk
1/4 c corn starch

blend together to desired consistency (sometimes a little chunky is preferred), then cook over low heat until warmed thoroughly. transfer to pie crust (i’ve taken to just buying pre-formed graham crusts

bake at 400 for 30-40 minutes

i’ve added a raspberry compote before, which was good, but i might do a blueberry one next. the wife likes them plain though

I think I saw a recipe with vinegar in it. Seemed weird. Your's is probably better.

the worst thing is processing the coconuts (especially when the pie doesn’t generally last more than a day or two)

i use a Filipino bolo, which is nostalgic but hardly efficient

I like coconut. Sounds good but what’s the difference between young coconuts and old ones? Can’t you just use what comes in a bag?

the “meat” is still moist in the young ones, but i’m sure you could use old ones

the flavor is also different

when i get mine they look like this:
