i don’t care what the meat is, spice, tang, and then sweetness are my priorities for sauce
Have we fallen into a mesmerized state that makes us accept as inevitable that which is inferior or detrimental, as though having lost the will or the vision to demand that which is good?
Doing a rack of ribs tomorrow along with some Asian style wings and stuffed jalapeños. Prolly some bbq'd beans and maybe those whiskey tango hash brown casserole things.
Mustard on my bbq is a big no. I’ll just eat the cue dry.
Vinegar on my bbq is a “do you have any other sauce?” and if not use it in light portions. I think it’s fine—but I’d prefer tomato based sauces.
Every Memphis sauce I’ve had has tasted sweeter than your Bryant’s or Gates. Give me Gates bold and spicy over anything.
“ why all these places serving fries with BBQ?”
Almost every KC BBQ joint does fries.
If you’re in the South you’re likely getting hush puppies as something similar.
Also fries with BBQ is great. I love fries.
Give me baked beans, fries, onion rings, hush puppies, collards, potato salad, slaw, Mac and cheese, okra, baked potato ( with a big distance between Mac and cheese and baked potato - I like baked potatoes it just doesn’t belong in bbq ) probably in that order on a standard day. I love dipping fries in the sauce/sauces.
