Simple answer to your question is - Because Wilson is now "healthy" and he's #1 ("first team") on their depth chart and while Fields has been serviceable, he hasn't been anything so special. Heck, he (Fields) himself said he feels he has been far from great.
Yes, the Steelers are 4-2. Ok, could/would they not be 4-2 with Wilson? We don't know. Heck, they might be 6-0 and they might be 0-6. Wilson has a much better W % in his career than Fields has.

My only theory, is that they are already committed to Fields long term, but are hoping Wilson can play really well this week or next and become a trade target for one of these teams without a QB.
Or Wilson is just better than Fields?

I think it’s confusing too but ultimately I don’t think you actually are a threat to win in the playoffs with Fields even at his best.

Despite his situation in Denver he actually wasn’t too bad last season. 67% completion. 26 TD to 8 INT. It’s a flawed stat but he was 8th in passer rating.

Also the Saints are about to face the music of cap space reality.
They pushed everything down the road and now the road is here. Next year they are stuck with this roster. I think the following year they also have barely any wiggle room. They can’t reset, they are trapped.

I agree with the fact they are 4-2 and doing well with Fields but I don't think he's been a top 15 QB.
Josh Allen, Jayden Daniels, Brock Purdy, Lamar Jackson, CJ Stroud, Baker Mayfield, Joe Burrow, Kirk Cousins, Geno Smith, Jordan Love, Sam Darnold, Jalen Hurts, Kyler Murray, Joe Flacco, and yes, even the meh Patrick Mahomes have been better.
Then you look at guys like Dak Prescott and Jared Goff who have had tough starts but as recently as last year were good quarterbacks...have Caleb Williams who is starting to heat up...and, I do have to say it, Aaron Rodgers who now has his lover boy WR.
I think all listed are better than Fields ( in real life not in fantasy points ).
