yea. I tend to like the heartiness of some taters in the morning.
I don't not love hashbrowns too. But if they're over done, they can just kinda be a crunchy greasy void of what used to be starch.
I'll again tout (oops) Sharky's for their breakfast potatoes. They're more home fries, but also kinda crushed up while cooked on the flat top, so you get some thicker heartier bites plus some crunchier bites. Best of both worlds.

another couple spots you might find yourself moseying by: the Elkhorn Cafe, just outside of Chama, NM, and the Roadrunner Cafe between Espanola and Santa Fe
Elkhorn might have the best juevos rancheros i’ve had, and Roadrunner has phenomenal sopapillas

I love Chama.
We are planning to do an Overlanding trip in late 2025 from Vancouver through Montana, central Wyoming, down the middle of Colorado (a stop in the valley to hand out with some Jayhawks) into NM, over to Bisbee, then Death Valley, up 395 into Oregon and then home.
