Tacos: Tripa in two soft corn tortillas topped with diced onion and cilantro and really hot salsa.
Enchiladas: Pork with green chile and cheese. Or cheese and onion with red chile sauce.

When is it not?

I love mole and never recall a bad experience besides one time I tried to make it on my own with only ingredients on hand: mostly chocolate, peanut butter, and tapatio. but even then it was serviceable at the time LOL I was gushered.

Aw, man, no way, I'm totally with JiJ here. Most are way too chocolatey and it covers up the other shit-ton of ingredients and their flavors. Good moles are great, but rare.

I love chocolate, but I've never liked mole. And I'm much less likely to find "good" mole in Florida, than I was in KC.

I never said I prefer it; only that my late night attempts to macgyver some mole turned out serviceable and that I dunno if I’ve ever had truly good mole.

The Mexican joint in town seems to have a good mole. Not too sweet or chocolatey, with a lot of flavors going on, but what do I know.

Oh! And there was this one time I bought a jar of mole from the store. That was no good.

Now quit hogging the bong and pass that shit, bro

Red Iguana is probably the most well-known mexican joint in town (featured on diners, drive-ins, and dives)...if memory serves, they’ve got a half dozen varieties of mole available, none of which really did anything for me
