in my experience, it usually is
pressure-cooked pork, hominy, and roasted red and dried red chili’s that have been steamed (to remove the skin, then purée the pulp), and whatever additional seasonings...maybe some fresh green onion or cilantro
i’m probably leaving something out, but that’s what i remember from my mom’s recipe...nothing really for a thickening agent

OK. Sounds like it. The gal he was sitting with had a pile of shredded pork on her plate, and she was doing the same thing in their shared bowl. Put meat on a tortilla, then treat it like a French dip.
Thanks, traddy.

This is not the place for that content. Again, don’t mix Mexican with continental.

I like a good French dip. There are some terrible ones out there though.
Chicago beef sammiches may be even better with the spicy giardiniera.

bad meat or bad bread can mess up a french dip.
I like to make them with leftover Rib-roast, so after a holiday. And I like a fairly crunchy baguette for the bread.
I don't add anything to mine when I make them, just meat and bread and dip it in au jus.
At a restaurant I'm ok with cheese or mustard.

French dips are terrific. I like mine with meltes cheese and on lightly toasted garlic butter french bread. Soft bread dipping into au jus just turns mushy and messy, throws all the textures off.
And did i read something about sharing a bowl? No, no sharing of the au jus bowl. No.

Same. Place I'm grabbing lunch from does a brisket dip and I rarely use the au jus because the bread is relatively soft as is and I don't like mushy slop bread.
Going with hot chicken sandwich today though. It's a play on the Nashville hot chicken, but it's not very similar imo. Still really good. Fried chicken breast with pickles and a weird sweet BBQ sauce that is very good.

I'd rather have FD's without cheese, grilled onions are a great addition though.

OK, now I'm hungry!
Never actually thought about it, but always "figured" you for a gas stovetop* cook.
*Unless that's an induction?

Nope, electric. No gas to the neighborhood which is typical here. I think the coal companies have something to do with it.

I feel you.
When we moved from KC to Orlando we built a new home in a new neighborhood. Natural gas isn't ubiquitous in Florida like it is in Kansas/Missouri, so we decided to bury a propane tank and use it for the range and the pool heater. Arranging that was on us, we only needed to have the builder, (of a brand new f***ing home), stub the pipes in. You would have thought that we asked them to gild the house in gold, but they did it. At the final walk through before they handed us the keys, the foreman brought it up, obviously wanting our thanks for the gargantuan favor they had done us by making it possible to have a gas stove. When he didn't get the affirmation he was looking for, he added that out of the 72 houses in the addition, only two of us had requested they stub their house for gas and, "we'll never do that, again", he said.
