I use an Instant Pot. The thing is great for beans.
Set it to Saute and add 1/2 onion diced and a quarter green pepper diced with a tablespoon or so of bacon fat. Add a little salt to get the veggies to release some moisture and get them cooking. When the onions start to brown on the edges add 3 cloves chopped garlic and a spice mix of chile powder, onion powder, garlic powder, cumin, oregano, black pepper and white pepper. I also add some of my home grown, smoked and ground chipotle. Stir for just a minute, you don't want to burn the garlic and spices. Add a can of rotel and some chicken broth. Keep the IP on saute until this comes to a boil then add beans, shut it off, and set for pressure cook for 45 minutes.
Updating. 45 minutes wasn't quite enough. Back in for another 15 with some salt.
Couple of notes. A lot of people say not to add salt or tomatoes at the beginning of the cook because "they" say that the beans won't soften. I've never found this to be true but I generally salt towards the end.
When using an IP with beans, do not release pressure right away. Let it sit for 10-15 minutes before you release. Releasing early can cause the beans to expand rapidly and burst.

I tried to get enchiladas for dinner last night at a popular Mexican restaurant.
1 hour wait.

I had a spicy chicken sandwich down the street instead. Kinda bummed.

Thursday, I believe, will be tacos al pastor and some rice. mtg a buddy in a little mexico district for lunch.
love (love!) perusing a menu in advance. sadly, the shop has no site of its own, so the menu is only to be seen on a "menu-4-u" kinda thing. woefully incomplete. great place. sad!

Check Yelp. A lot of times people will take a picture of the menu on post it on Yelp.

well, I finally had the tacos al pastor I thought I was jonesin' for...
just ok. too many really fresh raw white onions, not enough cilantro.
pineapple was perfect, and meat had a good grill-yness to it, but in the end...
...they weren't enchiladas...

If you're anywhere close to KC, try El Camino Real @ 7th and Minnesota in the 'Dotte. Probably the best in KC. Corn tortillas are rolled and grilled to order. Al pastor meat is carved to order with the pineapple and then grilled. Great stuff.

Best for Pastor. For any other meat, including my second fave lengua, San Antonio's is tough to beat. Bickelmeyer's also good.
I hope they all survive the next few weeks.

I have friends who swear by San Antonio's, and there's no doubt it's great. Not sure how you beat the homemade corn tortillas.
I miss Bickelmeyer's. There's nothing like that here. On Saturdays to go down and get something to toss on the grill,eat some tacos, and then get a dozen of the best tamales to bring home. Nothing like it.
