I'll never forget when the first (only?) Chi Chi's came to Wichita in the 70s. It seemed like it was always packed. I remember wondering what all the fuss was about, over dishes that seemed like 80% lettuce.

I worked at one in Fredericksburg, Va. long ago.
Compared to why I know about Mexican food, it was hot garbage…
…that said, I bet I’d still like the taste of everything there.
Lettuce definitely filled the plate, but there was SO much food on all the plates. I still use the queso recipe from there when I make it at home. It’s velveeta-based, it’s not really food, but it’s really delicious.

Last year LFK was flooded with Chiles last year. I haven’t been to grocery story in last two weeks to know this year. I need to get on that. I roasted a lot last year l, and have one bag left in the freezer.
