In other words, if/when someone you love gets Covid and gets seriously ill (and dies?), you're cool with people telling you it's sad but we shouldn't really care because it's just one potato?

This isn’t the total. This is just the folks in ICUs right now. A slice of right this second of how many ICU deaths. Not the people that will never make it to an ICU. Not the 650,000 (entire state of Vermont) or the tens or hundreds of thousands of future preventable deaths.

i think some forget that these numbers are happening WITH mitigation

one can only imagine where we’d be if we just sat by and “let” covid run roughshod through the population

There would certainly be a mutation also that came from no mitigation that would be deadlier too.

Isn't it just as possible that mutations can result in a less deadly strain becoming dominant? Historically do viruses tend to get more or less deadly?

Well if enforcement is anything like their mask rules inside the parks then I doubt it will matter much.

Some businesses make rules for safety. Others make rules for optics.

I am not sure which Disney will be, but they have mask rules and they weren't really being enforced when i was there in June.

Middle of June.

Some restaurants inside the parks were closed. But we still had a wonderful time. Especially at Animal Kingdom.
