I can do sweet potato fries but much much prefer regular spuds.
I hate sweet potatoes if you boil/mash them.
Only on Thanksgiving and only a spoon full just to check it off the list.

They cut them up and soak them in vinegar overnight, and fry them just to the point of crispy...skin and all.

Flavor, and, it seems to make them more crispy.
