What’s “competition-style” sauce?

I have. Only once though. Good stuff and I got to talk to the owners for a brief time. The too brothers and they're mom.

I swear, it was mostly just molasses.
Never get "Kansas City Style" barbecue sauce.

Agreed.

Although I generally prefer no sauce at all on ribs and brisket. Kind of have to have some on pulled pork

How do you not get sauce on pulled pork once it’s all swimming together in the crock pot?

Gates original is always my go to, especially for grilling chicken.

Restaurants are competition-style. In KC, you can separate out the old traditional (often black) bbq places with deep histories and the new guys that opened restaurants after science-ing the shit out of the cooking process on the circuit (OK Joe's, SLAP, Q39, etc.)

Nice people. Met them at a competition and they always placed very well. Doesn't always translate to a good restaurant, though, but they are killing it.

Very good thread.

Cascadia, some of your posts really tickle me.

99, you're the voice of reason here.

I don't like seafood, but it's a texture (not taste) thing; I'll do swordfish or tuna steaks.

I don't like eggs, also a texture thing.

I will eat almost any vegetable.

I hardly ever eat sweets. Desserts out is about it. I'll eat an entire can of Pringles in a sitting, but will never grab a cookie or candy bar.

Entire can of pringles mmm

Yeah, if I’m gonna binge on junk food, it’s gonna be savory instead of sweet.

(Wanna see a magic trick? Give me white cheddar Cheetos and I’ll make the entire bag disappear)

Extra Toasty Cheez-Its and Spicy Nacho Doritos are my jam at present.

I’m pretty bland on the chip/snack scene as well. Love tortilla chips and popcorn, that’s about it

Whoa, same boat.

Of course, I'll eat anything if it's offered and put in front of me. Sometimes the old classic Lay's can hit the spot, especially at a paper-plated cookout.

I buy a bag of cheetos about once a year. It doesn't last long.

Always preferred Ruffles to Lays.

What's goddamned terrible are "kettle" style chips.

Just watched a show about the guy (Lay) that came up with the chips, their production and marketing. He reached out to the guy that bought the recipe for fritos ($100!, from a guy that just wanted to move back to Mexico) and then developed the mechanics of mass producing them.

Thus began the massive enterprise that dominate the snack industry. Can't throw a ham in the chip aisle w/o hitting their product...

How 'bout that?

Agree as to ruffles. disagree as to kettle. We can still work together, I think.
