Gutter's 5 THOUGHTS and 1 Gutterism for National Punctuation Day and National Cherries Jubilee Day 9/24/24

1. I sort of know what cherries jubilee is and I a lot of know my punctuation sucks. Starting next year, if Trump is President, I am going to speak with him about declaring September 24th as National Gutter's 5 Thoughts Day.

2. Speaking of Trump, I am confident if MICH asked 100 people at MICH's mall who Matthew Crooks is, less than 7 would know.
I am confident if MICH showed them this photo and asked them who it is, less than 20 would know he is the guy who allegedly shot Trump in/on the ear - and at least 3 would guess it is/was MICH's Freshman High School class photo.

3. There is a Farmer's Market near me that I often go to on the way to work on Tuesday mornings. One of the vendors makes a homemade garlic asiago bread. They typically use VERY little garlic and/or asiago. I had a thought yesterday. I wonder if I offered to pay them $25 for the bread (typically it's $12), if they would bake me a special one with A LOT of garlic and asiago and bring it next week for me to buy. I'm going to ask them today.

4. It is going to be a super busy day at work today. That's it. That's my thought for #4.

5. Bags are highly underrated objects. I don't know if a bag was invented per se but if they were, they have to be one the top 10% of inventions of all time.

3 - i’ve got a simple but delicious “artisan” bread recipe if you want it…way cheaper than $12 or $25

4 - make sure you take a break for yourself

5 - The earliest known bag is a pouch worn by Ötzi the Iceman, Europe's oldest natural mummy (some 5300 years ago), who was found in the Alps in 1991. The bag was made from chamois hide and had a strap attached to it. Ötzi used the pouch to carry small items like a scraper and a drill.

2. Why do you have a childhood school picture of that person?

3. I think they will.

5. Yes. Especially golf bags. It'd be a real pain to carry all that stuff without a golf bag.

these aren't questions

I need a new bag for trapping...right now I use an old hunting pack but I don't like it. debating whether to go with a duffelbag style, a bucket with compartments or a pack basket style.

I'm leaning heavily against the bucket. it's not a ton of stuff it's just awkward things that don't fit well in a standard bag

I suppose is the pack basket style is good enough for Tom Oar it's plenty good for me.

2. At what age are you no longer considered in your "childhood"? The person in that photo was really THOMAS Michael Crooks and he was 20 years old when he died. My guess is that photo wasn't too old.
To answer your question. I have the photo because when I typed his name in to a Google search it was one of the first (if not the first) photo of him that popped up.
3. I asked the main guy who is usually there and the woman that was also there. He looked at me with a sort of funny look so I said nevermind. The bread today is severely lacking garlic and asiago Moral of the story is, they don't make me buy it.

5. I heard Golf was invented by douche bags for the sole purpose of that they thought it was funny to make slaves carry their shit and to make fun of them. True?

2 - 3.25 C flour, 2 tsp salt, 2 tsp yeast…mix together. slowly mix in 1.5 C of luke-warm water (there’s a “science” to the temp, as it affects the yeast activity and eventual rising of your dough). before the dough is entirely mixed is when i add green chili. this recipe makes two medium sized loaves, so i tend to use four green chilis total. split the dough into two, and then allow to rise for at least three hours at room temp. for baking, i use a sheet pan with parchment paper and a layer of cornmeal (keeps the pan clean and prevents sticking). after the 3-hour rise, transfer the two wads of dough to the prepared sheet pan and allow to re-rise for another ~45 min. preheat oven to 475. if your loaves have flattened too much, you can flour your fingers, and pull up and join the opposing sides of the loaves with a twist (if that makes sense). lightly brush the top surfaces with olive oil and bake for ~25 min

if done right, good luck not eating a whole loaf the first day

3) Ah, a question. That is a difficult ask. Garlic and cheese are probably added at the beginning of the process. So making one loaf different is not possible. Learn to make your own, gonna be cold and nasty in Chicago soon. Spend the day baking.
4) I had a chef who would say, during the middle of a Saturday night rush, "work faster, you can go home sooner."
5) Depends on what's in them. Weed or dog poop.

Sounds delicious. Do you knead by hand, and for how long? Or is that a no-knead recipe?

no need to knead

when i first started with this recipe i was doing it all by hand, but i’ve since gotten a nice stand mixer with dough hook. i don’t any additional prep to the dough

it makes total sense if you think about it, but i had no idea just how much the water temperature affects the yeast. i’ve even taken to warming up the diced green chili prior to adding to make sure it doesn’t cool the batch down and slow the CO2 production

Cool! I’ll try it out. I used to knead for 5-8 minutes, to let the gluten develop. But of late I’ve been just mixing to incorporate everything. Thanks!

the original recipe i started with says you can let it proof in the fridge overnight as well, but i was really disappointed in the result the one time i tried that

something else i’ve yet to try is having a water reservoir in there with it while baking. apparently that’s the trick to getting the crispy crust with soft innards

maybe next time

If it's a gas oven, toss a glass of water in after you put the bread in and close the door really fast.

Pro tip, just the water, not the glass.
